A few weeks ago I made the mistake no one on a diet should make: I went to the supermarket on an empty stomach. I admit it took some self control but I made the (diet)wise decision to pass the confectionary aisle and picked up something from the health food section instead. I decided on a nice ‘raw coconut rough’ superfood bar which turned out to be absolutely delicious but sadly also very expensive…

As I sat in the car slowly enjoying my special treat I studied the packaging and read it only had 7 ingredients. It got me thinking that if I could source those ingredients I could try and replicate the same product at home so it would be more suited to our family budget. I found all the ingredients at my local supermarket and health food store (bulk is the way to go with a large family!) and got out my Russell Hobbs food processor.

Raw Coconut Rough Russell Hobbs

To make my Raw Coconut Rough I used the extra strong titanium coated blades (much harder than uncoated stainless steel) to easily cut through and chop the coconut flakes. The processor has four different speed settings to suit all your prepping needs and you can see by the colour of the handy light-up ring which setting the machine is on, to get my mixture to the right consistency I used a combination of speed 3 (blending) and P (chopping, processing).

The only downside of making my own snacks in my food processor is that it does take a bit of washing up. You have to take all the pieces apart for a thorough clean (by hand or dishwasher) afterwards, so the best way to make the dishes worthwhile is by making a few big batches at the same time. After making my Raw Coconut Rough I also made a batch of Raw Almond Bliss Balls, hubby and the kids go crazy for these.

Here’s my homemade Raw Coconut Rough recipe and the products/brands I used:

Raw Coconut Rough

  • 4 tbsp Raw Organic Cacao Powder (Power Super Foods)
  • 1 tbsp Raw Organic Lucuma Powder (Loving Earth)
  • 3 tbsp Raw Organic Coconut Oil
  • 1/2 tsp Organic Vanilla Bean Paste (Queen Fine Foods)
  • 3 heaped cups Coconut Flakes (try the ‘bin’ section at your health food store for best value)
  • 15 Medjool Dates (pitted)
  • pinch of Himalayan Pink Rock Salt

With the measuring part done the rest is smooth sailing, just throw everything in your food processor and blitz to combine (there should be no big coconut flakes left!). It may take a while to come together and don’t forget to scrape down the sides from time to time. Once everything is combined it may still look a bit crumbly, but if you can squeeze it and it stays together well it will work.

Line a large baking tray with baking paper with plenty of baking paper hanging over on the side. Place your mixture on the baking paper and fold the ‘overhanging’ baking paper over the top. I used a rolling pin to flatten the mixture and smooth it to cover the entire tray, my slab was about 7-8mm thick but obviously there may be some variances. Pop your tray in the freezer for an hour or so.

Your raw coconut rough slab should now be quite solid and not as sticky so it is very easy to cut. I cut mine in little bars weighing approx. 30g each. Remember that due to the dates the sugar content is quite high even though they are natural sugars, so you don’t want to make your bars much bigger than this. I feel this is the perfect size and chocolatey snack to keep me going. Keep in the fridge, enjoy!

No matter how much I wish she would stay small forever, our beautiful little Harriet is growing up fast and she is definitely no longer a newborn. Now that she is almost 5 months old and weighs in at an impressive 7kg this gorgeous girl is starting to get very interested in all the ‘grown-up food’ she is missing out on, I think her first try of solids is just around the corner.

As cute as that ‘first bite’ photo will look on your wall, after four kids I know that starting solids also comes with a fair bit of work and a huge amount of mess. Here are a few tips and tricks to make this stage enjoyable for all:

Cook in bulk
Instead of preparing one tiny bowl of fresh food every day it is much more time efficient (and budget friendly) to cook larger quantities and store them in your freezer. If you freeze your baby’s meals in bite-size portions you can simply take out a single serve when needed; quick, easy and less wasted food.

As you may have read last week one of my New Year resolutions is to live and eat healthier, not just in 2015 but permanently. We’re only 3 weeks into the new year so if you haven’t already now is the perfect time to ditch unhealthy habits and make the necessary changes in your, and your family’s, diet. Don’t worry, you can still enjoy your favourite snacks! Ditching the bad foods is much easier than it sounds, it’s all about ‘swapping’:

You can cook a range of different meals in the Actifry in both fresh and frozen state (depending on the food), the large stirring paddle keeps the food moving so everything is evenly cooked. Personally I prefer to peel and cut our own chips but if you’re short on time you can easily grab a bag of frozen fries from the freezer and toss it in. If you love a good risotto but dislike the amount of stirring required the Actifry is a great way to save yourself a sore arm. The stirring paddle does all the stirring for you (only when using the lower cooking zone on its own, when using the tray too stirring is disabled), it doesn’t get much easier than this.

To see how your meal is progressing you can peek through the transparent lid, which also keeps warmth (and any spatters that could possible escape when cooking) contained within the unit. With just four buttons the Actifry is easy to control and the handy LED display shows exactly how much time is left before your dinner is ready. To remove the tray and bowl from the Actifry you simply click on the handle so you can lift them out and serve your cooked meal.

As we are a ‘big’ family of six we generally make use of the full capacity which means most meals have a cooking time of around 40-45 minutes. This is a perfect amount of time to hang up a load of washing, tidy and vacuum the living room or finish off some homework so when the chores are done dinner is waiting for us. When we walk back in the door after swimming at 4.30pm we pop on the Actifry 2-in-1, shower all the kids and sit down for a yummy meal, it’s ideal for busy families who value their time and care about healthy food.

On Christmas Day we took the Actifry to the inlaws and cooked a batch of chips for all the kids while we prepared Christmas lunch, the Actifry did all the work and the feedback was fantastic. All guests wanted to try the chips and could not believe how delicious and crispy they turned out! I almost had to fight to take our Actifry back home, they loved it so much they wanted to keep it.

Both cooking layers of the Tefal Actifry (as well as the stirring paddle) can be removed for easy cleaning, the non-stick coating makes them a breeze to clean and it takes just a few minutes to wipe down the interior and included measuring spoon. Unlike with yucky deep-fryers there are no spatters of oil everywhere, it’s literally clean eating. All in all once dinner is finished the Tefal Actifry is generally back on the shelf in less than 5 minutes so it’s quick and easy.

Since we acquired the Tefal Actifry we have not had take-away chicken and chips once, simply because the chips ‘from home’ taste a million times better and healthier. Larger potatoes take less peeling but small potatoes make delicious chips too.

The final verdict: Obviously the Tefal Actifry costs considerably more than your average deep fryer which could scare some people off, so it is important to remember that it is much healthier (after all, it is NOT a deep fryer!) and you can also cook many more different dishes in it than in a standard deep fryer. It is easy to use, quiet when cooking and it won’t leave your kitchen bench greasy and your whole house smelly for days. I will admit that before we started using the Actifry I would have felt the expense was too big, however after using it many times over the course of a few months I see how the Actifry is a great investment that helps families cook healthy meals and is almost like a very welcome extra set of hands, we can now not imagine our busy kitchen without it.

Side note: During the cooking process we experienced some condensation under the LED screen which disappears once the unit has cooled down. After thorough investigation I have been ensured by Tefal Australia that the shadowing is considered normal and will not impact on the performance for the product, therefore it is no reason for concern.

It feels like I just blinked and 9 months went by. Not much longer and Sybbie won’t be a baby anymore, she is standing up, cruising the furniture and eating two whole slices of bread for lunch. With no teeth in sight Sybil is still enjoying her baby meals but she is quickly becoming more independent, feeding herself with her hand and trying very hard with a spoon.
